The Chimay Rouge (also known as Première) is the classic from the traditional Abbaye de Notre-Dame de Scourmont. It is the oldest of the Chimay beers and embodies the epitome of a Belgian Dubbel.
Sensory & Character
Appearance: In the glass, the beer displays a warm, dark copper tone with reddish reflections. It is crowned by a firm, creamy head, slightly beige in color.
Aroma: Upon first sniff, a complex bouquet unfolds:

Fruitiness: Distinct notes of apricot and ripe stone fruits.

Sweetness: Aromas of caramel and light malt.

Spice: A subtle yeast note, typical of the Chimay yeast strains.
Taste: The initial taste is full-bodied and soft. On the palate, there is an elegant balance between a light malty sweetness and a delicate, silky bitterness. The carbonation is present but well-integrated, making the beer surprisingly drinkable despite its complexity.
Finish: The finish is long-lasting and dry with a subtle tart note that makes you want another sip.
